We asked diet + nutrition expert Chelsea Williams to share her favorite plant-based picks.

Plant-based foods don’t have to be bland or boring. And comfort foods can be healthier when prepared at home – and made with a twist. The next time you want to treat yourself, try one of these! 


Lotus Root Chips aka Renkon Chips Renkon is the root of the lotus flower, and it is high in vitamin C, iron, and fiber. Lotus root chips are reminiscent of potato chips, so when you want a savory swap, reach for these! Eat them as is, or use them as a topping in your favorite dish. 

 

Non-Dairy Ice Cream with Coconut Whipped Cream Comfort foods that are quick and easy to make? Yes, please. Non-dairy ice cream is so fun to make at home in a high-speed blender. Just add a few of your favorite frozen fruits to coconut milk or coconut cream, and blend. Get creative and try adding in maca, matcha, or other adaptogens.  

Turmeric Popcorn What’s a movie night without popcorn? Turmeric is known for its anti-inflammatory and functional benefits. Elevate your bowl by adding some turmeric, sea salt, and a little black pepper (to help aid the absorption of turmeric’s healthy compounds) when cooking. The turmeric gives the popcorn that nice yellow color like traditional popcorn, so it’s hard to spot the difference! 


Caramelized Pecans Caramelized pecans are reminiscent of the holiday season and a great addition to charcuterie boards, salads, or baked goods. They have lots of healthy fat, protein, and fiber to help keep you full. They are also rich in amino acids, which can contribute to fuller, healthier hair.  



Plant-Based Pizza with Cauliflower Crust and Non-Dairy Cheese A plant-based pizza is a great way to load up on all the veggies! Cauliflower crust is lower in carbohydrates than traditional, refined white flour crust. Top with antioxidant-rich leafy greens for vitamins A, B, C, E, and K, plus folate. Finish with a sprinkling of non-dairy cheese.
